Fruit Scones: Simply delicious!

Scones are small cakes of Scottish origin. Scones are especially popular in native English speaking countries such as UK, USA, Australia and New Zealand. They are a perfect partner to a good cup of tea. They can be served with whipped cream, jam, real dairy butter or sour cream. They may also be good with honey, but I’ve not tried that yet!

Ingredients (makes 8-10 scones):

  • 310g Flour
  • 2.5 tsp Baking Powder
  • 1 pinch Salt
  • 40g softed Butter (but not melted)
  • 1 tbsp Sugar
  • 240ml Milk
  • 40g Raisins

Method:

  1. Pre-heat the oven to 220c.
  2. Place some baking paper on a baking tray, enough for around 10 scones.
  3. Sieve the flour, baking powder and salt in a bowl.
  4. Add the butter to the flour mixture and “rub-in” until you have a ‘sandy’ consistence.
  5. Add the sugar and blend this into the flour mixture.
  6. Make a well in the middle of the mixture and add 3/4 of the milk. Blend the mixture gently until it begins to come together. Add the remaining milk if the mixtures seems too dry.
  7. Add the raisins (optional) until they are well mixed into the dough.
  8. Dust your hands with flour and mould the dough into one large ball. Do not over-work the dough as to do so will make hard scones.
  9. On a lightly floured work surface, evenly roll out the dough until it is around 2cm thick.
  10. Using a round pastry cutter (ca.6cm diameter), cut out rounds and place them gently on the prepared baking sheet.
    Collect the remaining dough, roll it out again and cut out more rounds.
  11. Brush the scones lightly with milk.
  12. Bake the scones in the oven for 12-15 minutes or until they have risen and are golden brown.
  13. Leave to cool slightly before serving. They are delicious served warm with whipped cream and jam.
