Banana Pancakes

These pancakes are really simple to make and make a great change from ‘normal’ pancakes. This recipe is “relatively” healthy and uses bananas in the actual pancake mix itself. I also used banana, lime and honey to fill the pancakes which was surprisingly delicious!

Ingredients (makes approx 6-8 pancakes)

For the Pancake mix:

  • 3 Bananas
  • 6 Eggs
  • 3 cups Flour
  • 2.5 Glasses of Milk (approx 650ml)
  • 1 tsp Salt
  • 1 tbsp Sugar

For the filling:

  • 3 Bananas
  • 1 Lime
  • Honey
  • Sugar

Method:

  1. In a food mixer, blend together 3 bananas and the milk.
  2. In a separate bowl, mix together the Eggs, salt, sugar and the Flour until you get a very smooth paste.
  3. Add the Milk/Banana mixture slowly while gently mixing.
    If you have lumps in the mixture, it may be an idea to pass it through a sieve again :)
  4. In a hot frying pan, melt a small knob of butter (1tsp) then add enough pancake mix to cover the base of the pan.
    Cook the pancake for a few minutes until it starts to be golden brown on the underside (you can have a peek to check!)
    If you are adventurous, toss the pancake, if you want to play safe, use a plastic fish-slice or palette knife to flip the pancake to cook the other side.
  5. Remove the cooked pancake from the pan and allow to cool slightly.
  6. Fill the pancakes with banana, honey and a squeeze of fresh lime juice.
  7. Enjoy!
