Cauliflower & Chive Soup

Delicious and so simple to make! This soup is also gluten-free, dairy-free, meat-free and contains no artificial flavours. A foolproof recipe that can easily be adapted to suit your taste. It can be made from start to finish within an hour.

Ingredients:
- 1 Cauliflower – roughly chopped
- 2 Onions – finely chopped
- 4 Potatoes – peeled & diced
- 50ml Olive Oil
- 1L water
- 1 clove Garlic – crushed
- 2 Bay Leaves
- 1 tbsp Salt
- 1/2 tsp white Pepper
- 1/2 tsp Cumin
- 1/2 tsp ground Coriander
- 1 handful chopped Chives
Method:
- Heat the Olive Oil in a pot.
- Add the chopped Onion and Garlic. Cook over a medium heat until the onions are transparent.
- Add the Potatoes to the Onions and cook for another minute, mixing well.
- Add the Cauliflower and mix well.
- Blend in the Coriander, Cumin, Salt & Pepper.
- Add the Water and Bay Leaves then bring to the boil.
- Mix well then simmer on a low-medium heat for 25-30minutes.
- Remove from the heat.
- Using a food processor or a hand-blender, blend until there are no solids left.
- Stir-in the chopped Chives. Taste then season accordingly.
- Serve
