Cauliflower & Chive Soup

Delicious and so simple to make! This soup is also gluten-free, dairy-free, meat-free and contains no artificial flavours. A foolproof recipe that can easily be adapted to suit your taste. It can be made from start to finish within an hour.

Cauliflower and Chive Soup

Ingredients:

  • 1 Cauliflower – roughly chopped
  • 2 Onions – finely chopped
  • 4 Potatoes – peeled & diced
  • 50ml Olive Oil
  • 1L water
  • 1 clove Garlic – crushed
  • 2 Bay Leaves
  • 1 tbsp Salt
  • 1/2 tsp white Pepper
  • 1/2 tsp Cumin
  • 1/2 tsp ground Coriander
  • 1 handful chopped Chives

Method:

  1. Heat the Olive Oil in a pot.
  2. Add the chopped Onion and Garlic. Cook over a medium heat until the onions are transparent.
  3. Add the Potatoes to the Onions and cook for another minute, mixing well.
  4. Add the Cauliflower and mix well.
  5. Blend in the Coriander, Cumin, Salt & Pepper.
  6. Add the Water and Bay Leaves then bring to the boil.
  7. Mix well then simmer on a low-medium heat for 25-30minutes.
  8. Remove from the heat.
  9. Using a food processor or a hand-blender, blend until there are no solids left.
  10. Stir-in the chopped Chives. Taste then season accordingly.
  11. Serve :)
