Easy Apple Cake

September is Apple season in Norway. A perfect time to make apple cake. This recipe is very simple and the result is delicious. This cake can be served cold, however it tastes wonderful served warm with vanilla ice cream or lightly whipped cream.
Ingredients:
- 3 Eggs
- 2.5dl Sugar
- 2.5dl Flour
- 1tsp Baking powder
- 50g melted Butter
- 4 Apples
- 1tbsp Sugar
- 1tbspCinnamon
Method:
- Pre-heat the oven to 175c.
- Grease a cake tin, approx 20cm.
- Whisk the eggs and sugar together until light and fluffy.
- Carefully blend in the baking powder & flour trying not to knock out the air from the mixture.
- Carefully blend in the melted butter.
- Put the mixture into the baking tin
- Peel and core the apples, cut them into slices
- Place the apple slices upright and press down into the mixture.
- Sprinkle sugar and cinnamon over the cake and bake in the oven for approximately 40 minutes.
