Easy Carbonara!

Impress your mates with this easy and quick variation of a classic Italian recipe. Remember to season well, personally I like plenty of cracked black pepper on my pasta! Normal ham can be used instead of bacon.
Ingredients:
- 1 large onion – finely chopped
- 140g mushrooms – sliced
- 3 cloves garlic – crushed
- 400g back bacon – chopped into 1cm strips
- 3 egg yolks – lightly beaten
- 250ml fresh double cream
- salt & pepper
- 200g freshly grated parmesan
- approx 50ml olive oil
- Pasta of your choice.
Method:
- Put a pan of water on to boil for your pasta.
Add a little salt and oil to the water, this helps to stop the pasta from sticking together. - Heat the remaining oil in a pan (medium to high heat), add the garlic and onion, bacon and mushrooms.
Cook until the onions are transparent and the bacon is cooked through (approx.5-6mins) - Remove from the heat, add the cream and mix well.
Add the egg yolks slowly, mixing continuously for 2-3 minutes. - Add the pan back to a VERY low heat and keep stirring (slowly) for another few minutes.
It is important that the cream does NOT BOIL, doing so will curdle the cream. - Season with salt and pepper, go easy on the salt as there is already bacon in the dish.
- Serve on a bed of spaghetti/tagliatelle/penne pasta and top with the parmesan and ruccola salad.
