Simple Beetroot Salad

The humble beetroot gets a bit of a hard time doesn’t it? Mainly due to the fact that most most beetroot is pickled to death then preserved in a jar. Nothing wrong with that, however beetroot is extremely healthy and has huge benefits for the heart and cardiovascular system in general.

beetrootAlso, since Roman times, beetroot has even been considered an aphrodisiac.

This recipe is really simple to make with only 4 ingredients.

Here in Norway this is used as an open sandwich topping and eaten mainly for lunch or supper. In Britain however, this recipe is probably best suited to being part of a lunch salad or a snadwich filling.

Ingredients:

  • 500g Boiled and peeled beetroot
    (I bought mine cooked & vaccum packed)
  • approx 75g Creme Fraiche
  • approx 75g Mayonaise
  • 1 tbsp fresh Lemon Juice
  • Salt

Method:

  1. Cut up the beetroot into small dices.
  2. Blend in all the other ingredients.
  3. Season with salt.
  4. Spread onto crusty baguette.
