Pickled Herring – Oberstinesild

This is another Norwegian Christmas favorite which is so easy to make. I must admit that it has an acquired taste and is not to everyones liking. In Scandinavia this is usually eaten together with bread….. for breakfast! Thanks to my Father-in-law for sharing the family recipe.

Oberstinesild

Ingredients:

  • 4 Herring Filets (cut into chunks)
  • 100g Sugar
  • 2 Bay Leafs
  • 5 whole black Peppercorns
  • 100ml Ketchup
  • 100ml Vegetable Oil
  • 100ml white Vinegar
  • 5 Cloves
  • 2 small Onions (finely chopped)
  • 3 Gherkins (finely chopped)

Method:

  1. Apart from the fish, mix together all the ingredients and stir well.
  2. Add the Herring and mix well with a spoon.
  3. Divide into 2 air tight glasses making sure the herring is covered by the liquid.
  4. Store in the fridge for 4-5 days before eating.
    These should keep well in the fridge for around 2 weeks.
