Pickled Herring – Oberstinesild

This is another Norwegian Christmas favorite which is so easy to make. I must admit that it has an acquired taste and is not to everyones liking. In Scandinavia this is usually eaten together with bread….. for breakfast! Thanks to my Father-in-law for sharing the family recipe.
Ingredients:
- 4 Herring Filets (cut into chunks)
- 100g Sugar
- 2 Bay Leafs
- 5 whole black Peppercorns
- 100ml Ketchup
- 100ml Vegetable Oil
- 100ml white Vinegar
- 5 Cloves
- 2 small Onions (finely chopped)
- 3 Gherkins (finely chopped)
Method:
- Apart from the fish, mix together all the ingredients and stir well.
- Add the Herring and mix well with a spoon.
- Divide into 2 air tight glasses making sure the herring is covered by the liquid.
- Store in the fridge for 4-5 days before eating.
These should keep well in the fridge for around 2 weeks.
