Christmas Muffins

Christmas Muffins are basically normal muffins but with a taste of Christmas. This recipe is very simple and quick. These muffins go very well with mulled wine or a nice cuppa tea!
Makes 8 large or 16 small muffins:
Ingredients:
- 300g Butter (softened)
- 300ml Sugar (preferably brown) – I used a measuring jug to measure
- 4 Eggs
- 500ml Flour (Plain)
- 1tsp Baking Powder
- 1 tsp Cinammon
- 1 tsp Ground Ginger
- 1 tsp Ground Cloves (or Nutmeg)
Method:
- Pre-heat the oven to 180c
- Mix the sugar and butter together until it reaches an airy consistency.
- Add the eggs slowly and one at a time, mixing carefully.
- Add the rest of the ingredients and mix them together well.
- Divide the mixture into muffin cups and cook in the oven for approximately 15-20 minutes.
- Allow to cool before decorating with icing (Christmas Trees?) or chocolate.
