Christmas Muffins

Christmas Muffins are basically normal muffins but with a taste of Christmas. This recipe is very simple and quick. These muffins  go very well with mulled wine or a nice cuppa tea!

Christmas Muffins

Makes 8 large or 16 small muffins:

Ingredients:

  • 300g Butter (softened)
  • 300ml Sugar (preferably brown) – I used a measuring jug to measure
  • 4 Eggs
  • 500ml Flour (Plain)
  • 1tsp Baking Powder
  • 1 tsp Cinammon
  • 1 tsp Ground Ginger
  • 1 tsp Ground Cloves (or Nutmeg)

Method:

  1. Pre-heat the oven to 180c
  2. Mix the sugar and butter together until it reaches an airy consistency.
  3. Add the eggs slowly and one at a time, mixing carefully.
  4. Add the rest of the ingredients and mix them together well.
  5. Divide the mixture into muffin cups and cook in the oven for approximately 15-20 minutes.
  6. Allow to cool before decorating with icing (Christmas Trees?) or chocolate.
