Thai Green Salad – Simple and Tasty!

This recipe can be used on a picnic, as a starter or even a summer main course. The picture shows the salad naked (undressed). Always bring your dressing separately and dress the salad at the last possible moment! Substitute the shrimps to make this a vegetarian salad.
Ingredients (vary the amounts depending on your taste):
Salad:
- beansprouts
- lettuce
- cucumber
- cooked shrimps/prawns
- coriander
- mint
- basil
- cashew nuts
- sesame seeds
Dressing: (not pictured)
- thai sweet chilli sauce
- lime juice
- sesame oil
- pinch of salt
Salad:
- Shred the lettuce, roughly chop all the herbs, slice the cucumber and smash the cashew nuts into little bits.
- Combine everything in a big mixing bowl. Mix well. Scatter sesame seeds on top.
Dressing:
- Whisk together a glug of chilli sauce, the juice of one lime (put the lime halves in with the salad after, for garnish), a dash of sesame oil and a little bit of salt. Adjust the levels to your liking.
- Store dressing in a container until you are ready to serve the salad.

This looks gorgeous, and sounds easy enough to prepare. My kind of dish!!! What kind of lettuce do you use?? Iceberg, green, Chinese or …?
I use “Vestfoldsalat” (Vestfold salad) or Kinesiksalayt (Chinese salad) as these give a great crispy bite together with the prawns, but really any kind would be good. A nice dark green lettuce such as oakleaf would make it look better.
